Ingredients

  • 2 whole English cucumbers
  • 0.5 cup Full-fat coconut cream
  • 2 tablespoons Fresh lemon juice
  • 3 tablespoons Fresh dill
  • 1 tablespoon Apple cider vinegar
  • 0.5 teaspoon Sea salt
  • 0.25 teaspoon Black pepper
  • 2 stalks Green onions

Directions

Step 1

Wash and peel the English cucumbers. Slice them very thinly and place in a large bowl. You may use a mandoline for more consistent slices.

Step 2

Sprinkle the cucumbers with a pinch of sea salt and let them sit for about 5 minutes to draw out excess water, which prevents the salad from becoming too watery.

Step 3

While cucumbers are setting, chop the fresh dill and slice the green onions thinly. Set aside.

Step 4

In a separate small bowl, whisk together the full-fat coconut cream, fresh lemon juice, apple cider vinegar, sea salt, and black pepper. This will be your dressing.

Step 5

Drain any excess water from the cucumber bowl. Pat the cucumbers dry with a paper towel if necessary.

Step 6

Add the chopped dill and sliced green onions to the cucumbers.

Step 7

Pour the prepared dressing over the cucumber mixture and gently toss to combine, ensuring each slice is lightly coated.

Step 8

Taste and adjust seasoning with more salt or lemon juice, if needed.

Step 9

Chill the salad in the refrigerator for at least 15 minutes before serving to allow the flavors to meld together.

Step 10

Serve cold as a refreshing side dish with your favorite Paleo entrée.
