Ingredients

  • 2 pounds chicken thighs, bone-in and skin-on
  • 1 medium onion, halved
  • 3 inches ginger, sliced
  • 3 star anise
  • 1 cinnamon stick
  • 4 cloves
  • 1 tablespoon coriander seeds
  • 2 tablespoons fish sauce
  • 2 teaspoons sea salt
  • 4 large zucchini, spiralized into noodles
  • 0.5 cup fresh cilantro, chopped
  • 0.5 cup fresh basil leaves
  • 1 cup bean sprouts
  • 1 lime, cut into wedges
  • 1 Jalapeño, sliced
  • 2 green onions, sliced

Directions

Step 1

In a large pot, add the chicken thighs, halved onion, and sliced ginger. Fill the pot with enough water to cover the chicken, approximately 10 cups.

Step 2

Bring the water to a boil over high heat. Once boiling, reduce the heat to low and skim off any impurities that rise to the surface.

Step 3

Add the star anise, cinnamon stick, cloves, and coriander seeds to the pot. Cover and simmer on low for about 2 hours to develop a rich broth.
