Preheat the oven to 400°F (200°C).
Place the beef marrow bones on a baking sheet and roast them in the oven for 30 minutes to develop a deeper flavor.
While the bones are roasting, char the onion and ginger on a gas stove flame or under the broiler until slightly blackened. Set aside.
In a large pot, combine roasted marrow bones, charred onion, ginger, star anise, cloves, and cinnamon. Add 8 cups of beef bone broth.
Bring the mixture to a boil over high heat, then reduce the heat to low and simmer uncovered for 3 hours, skimming any foam that rises to the top.
After 3 hours, remove the bones and aromatics from the broth and add fish sauce and salt to taste.
Prepare your chosen paleo-friendly noodles according to the package instructions, then divide them into bowls.
Slice the green onions thinly and chop the cilantro and basil.
Thinly slice the fresh chili peppers and set aside.
To each bowl, add a portion of noodles, then pour the hot broth over the noodles to warm them.
Top with slices of raw beef sirloin, allowing the hot broth to cook the meat slightly.
Garnish each bowl with fresh cilantro, basil, bean sprouts, green onions, chili slices, and a wedge of lime.
Serve immediately, allowing diners to customize their soup with lime and additional fish sauce as desired.
