Ingredients

  • 8 cups Beef bone broth
  • 2 pounds Beef marrow bones
  • 2 pieces Star anise
  • 4 pieces Whole cloves
  • 1 piece Cinnamon stick
  • 3 inch piece Ginger
  • 1 medium Onion
  • 3 tablespoons Fish sauce
  • 1 tablespoon Salt
  • 12 ounces Paleo-friendly noodles (zucchini noodles or shirataki noodles)
  • 1 pound Thinly sliced beef sirloin
  • 0.5 cup Fresh cilantro
  • 0.5 cup Fresh basil leaves
  • 1 cup Bean sprouts
  • 2 pieces Green onions
  • 1 piece Lime
  • 2 pieces Fresh chili peppers

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Place the beef marrow bones on a baking sheet and roast them in the oven for 30 minutes to develop a deeper flavor.

Step 3

While the bones are roasting, char the onion and ginger on a gas stove flame or under the broiler until slightly blackened. Set aside.

In a large pot, combine roasted marrow bones, charred onion, ginger, star anise, cloves, and cinnamon. Add 8 cups of beef bone broth.

Bring the mixture to a boil over high heat, then reduce the heat to low and simmer uncovered for 3 hours, skimming any foam that rises to the top.
