  • 3 tablespoons olive oil
  • 1 whole, cut in half lemon
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 4 leaves fresh sage
  • 1 whole bulb, cut in half horizontally garlic
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Remove the chicken from the refrigerator and let it sit at room temperature for about 30 minutes.

Step 3

Pat the chicken dry with paper towels to ensure the skin becomes crispy during roasting.

Step 4

Rub the chicken all over with olive oil, making sure to get into the nooks and crannies, then sprinkle with sea salt and black pepper both outside and inside the cavity.
