Ingredients

  • 500 grams fresh squid
  • 2 whole lemons
  • 15 grams fresh parsley
  • 10 grams fresh basil
  • 2 cloves garlic
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Begin by cleaning the squid: firmly pull the head and tentacles away from the body. Remove the quill and any remaining innards from inside the body. Remove the fins and peel off the skin from the body and fins, then rinse under cold water.

Step 2

Cut the squid bodies into thin rings and keep the tentacles whole. Pat all pieces dry with paper towels.

Step 3

Finely mince the garlic cloves. Chop the fresh parsley and basil leaves. Set these aside.

Step 4

In a large pot, bring enough water to cover the squid to a boil. Once boiling, add a pinch of sea salt to the water.

Step 5

Add the squid to the boiling water and cook for 2-3 minutes, or until the squid turns opaque and tender. Be careful not to overcook, as this will make the squid rubbery.

While the squid is cooking, zest one of the lemons and juice both.

Drain the squid in a colander and transfer to a large mixing bowl.
