Ingredients

  • 1 pound Ground pork
  • 0.5 cup, finely grated Onion
  • 2 cloves, minced Garlic
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried sage
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1.5 cups Almond flour
  • 0.5 cup Tapioca starch
  • 0.25 cup, melted Coconut oil
  • 3 large Egg
  • 1 teaspoon Apple cider vinegar

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, combine the ground pork, grated onion, minced garlic, dried thyme, dried sage, salt, and black pepper. Mix well using a fork or your hands until fully incorporated.

Step 3

In another bowl, mix almond flour and tapioca starch together. Then add the melted coconut oil, 2 of the eggs, and apple cider vinegar. Stir until a cohesive dough forms.

Step 4

Place the dough between two sheets of parchment paper and roll it out to about 1/4 inch thickness using a rolling pin.

Step 5

Cut the dough into rectangles about 4 inches wide by 6 inches long.

Step 6

Place a small amount of the pork mixture along one edge of each rectangle, then roll the dough over the filling until the edges meet. Press the edges to seal.

Cut each roll into 2-inch pieces and place on the prepared baking sheet.
