  • 4 cups Sweet corn kernels
  • 1.5 cups Almond flour
  • 1 cup Coconut milk
  • 0.25 cup Coconut oil, melted
  • 0.25 cup Honey
  • 3 large Eggs
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Cinnamon powder (optional)
  • 2 tablespoons Coconut sugar (optional, for sweetness)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish with coconut oil.

In a blender, combine the sweet corn kernels and coconut milk, and blend until smooth.

In a large mixing bowl, whisk together the almond flour, baking powder, salt, and cinnamon powder (if using).
