Wash the spinach and mustard greens thoroughly under running water to remove dirt and grit. Drain and set aside.
Heat a large pan over medium heat and add the coconut oil.
Once hot, add the chopped onion and sauté for 2-3 minutes until it becomes translucent.
Add the minced garlic, ginger, and green chili. Stir-fry for another 1-2 minutes until the aromas are released.
