Ingredients

  • 1 cup almond flour
  • 2 tablespoons tapioca starch
  • 1 cup coconut milk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey
  • 1 tablespoon coconut oil
  • 1 pinch of salt

Directions

Step 1

In a large mixing bowl, whisk together the almond flour and tapioca starch to combine evenly.

Step 2

In a separate bowl, beat the eggs and then whisk in the coconut milk, vanilla extract, and honey until well blended.

Step 3

Gradually add the wet ingredients to the dry ingredients, stirring continuously to avoid lumps. Mix until smooth.

Step 4

Heat a non-stick skillet over medium heat and add half a tablespoon of coconut oil. Swirl to coat the pan.

Step 5

Pour about 1/4 cup of batter into the center of the pan and immediately swirl the pan in a circular motion to spread the batter thinly and evenly across the surface.

Step 6

Cook for about 2-3 minutes, or until the edges begin to lift and the bottom is lightly golden. Carefully flip with a spatula.

Step 7

Cook the other side for another 1-2 minutes, or until it is fully set and lightly browned.

Step 8

Transfer the cooked crepe to a plate and cover with a clean kitchen towel to keep warm. Repeat the process with the rest of the batter, adding more coconut oil to the pan as needed.

Step 9

Serve the palacinka warm with your choice of paleo-friendly fillings or toppings, such as fresh fruit, nut butter, or a drizzle of honey.
