Ingredients

  • 500 grams Chicken breast, thinly sliced
  • 60 milliliters Coconut aminos
  • 15 milliliters Fish sauce
  • 10 grams Honey
  • 3 cloves Garlic, minced
  • 2 large Zucchini, spiralized into noodles
  • 200 grams Broccoli florets
  • 1 large Carrot, julienned
  • 2 large Egg
  • 2 tablespoons Coconut oil
  • 1 teaspoon White pepper

Directions

Step 1

In a small bowl, mix coconut aminos, fish sauce, and honey until combined. Set aside.

Step 2

Heat one tablespoon of coconut oil in a large skillet or wok over medium-high heat. Add the sliced chicken and stir-fry until just cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, add the remaining tablespoon of coconut oil. Add the minced garlic and sauté for about 30 seconds until fragrant.

Step 4

Add the broccoli florets and julienned carrot to the skillet and stir-fry for about 3-4 minutes until they start to soften.

Step 5

Push the vegetables to one side of the pan and crack the eggs into the cleared space. Scramble the eggs until fully cooked.

Return the chicken to the skillet, adding the spiralized zucchini noodles. Pour the prepared sauce over the contents of the skillet.
