Ingredients

  • 2 tablespoons coconut oil
  • 4 medium, minced garlic cloves
  • 2 small, sliced red chili peppers
  • 1 pound ground chicken or turkey
  • 2 tablespoons fish sauce
  • 3 tablespoons coconut aminos
  • 1 teaspoon palm sugar
  • 2 tablespoons water
  • 1 cup, packed Thai basil leaves
  • 1 medium, sliced onion
  • 2 optional, for serving large eggs

Directions

Step 1

Heat the coconut oil in a large skillet or wok over medium-high heat.

Step 2

Add the minced garlic and sliced red chili peppers, stir-frying for 30 seconds until fragrant.

Step 3

Add the ground chicken or turkey to the skillet, breaking it apart with a spoon. Cook until browned, about 5 to 7 minutes.

In a small bowl, mix together the fish sauce, coconut aminos, and palm sugar. Stir until the sugar is dissolved.

Step 5

Add the sliced onion to the skillet and stir-fry for 2 minutes until slightly softened.

Pour the sauce mixture into the skillet along with the water. Stir everything together and let it simmer for 2 minutes.

Step 7

Add the Thai basil leaves to the skillet and stir-fry for another 1 to 2 minutes until the leaves are wilted.

Step 8

Adjust the seasoning if necessary, adding more fish sauce or coconut aminos to taste.

Step 9

Optionally, fry the eggs in a separate small pan to your preferred doneness and serve over the stir-fry.

Step 10

Serve the Paleo Pad Krapow hot, optionally over a bed of cauliflower rice.
