  • 1 medium head cauliflower
  • 200 grams cherry tomatoes

  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 50 grams sliced almonds

Directions

Step 1

Cut the cauliflower into florets and place them in a food processor. Pulse until the cauliflower resembles the size of couscous grains. Be careful not to over-process.
