Ingredients

  • 2 tablespoons coconut oil
  • 4 large yellow onions
  • 4 large garlic cloves
  • 1 inch fresh ginger
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1 can (13.5 ounces) coconut milk
  • 1 cup chicken broth
  • 0.5 cup fresh cilantro
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 1 whole lime

Directions

Step 1

Peel and thinly slice the yellow onions. Mince the garlic cloves and grate the ginger.

Step 2

In a large pot, heat the coconut oil over medium heat. Add the cumin seeds and coriander seeds. Stir for about 1 minute until they begin to crackle and release their aroma.

Step 3

Add the sliced onions to the pot. Cook for about 10 minutes, stirring occasionally, until they are soft and golden brown.

Step 4

Stir in the minced garlic and grated ginger. Cook for another 2 minutes until fragrant.

Step 5

Add the curry powder and turmeric powder to the pot, stirring well to coat the onions with the spices.

Step 6

Pour in the coconut milk and chicken broth. Stir to combine and bring the mixture to a gentle simmer.

Step 7

Reduce the heat to low and let the curry simmer for about 10 minutes, allowing the flavors to meld together.

Step 8

Season the curry with sea salt and black pepper to taste.

Step 9

Just before serving, squeeze in fresh lime juice and garnish with chopped fresh cilantro.

Step 10

Serve the Paleo Onion Curry warm, on its own or with a side of cauliflower rice to keep it strictly paleo.
