  • 1 cup almonds
  • 1 cup cashews
  • 10 pieces medjool dates, pitted
  • 0.5 cup unsweetened shredded coconut
  • 2 tablespoons chia seeds
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon sea salt

Directions

Step 1

Place the almonds and cashews in a food processor or high-powered blender.

Step 2

Pulse until the nuts are finely chopped and resemble a coarse meal.

Step 3

Add the pitted medjool dates to the processor and blend until everything is well combined and begins to stick together.

Step 4

Add the unsweetened shredded coconut, chia seeds, coconut oil, vanilla extract, and sea salt.

Step 5

Blend until the mixture is well combined and sticky enough to hold together when pressed.
