Ingredients

  • 1 cup Almond flour
  • 0.5 cup Finely chopped walnuts
  • 0.5 cup Sunflower seeds
  • 0.25 cup Ground flaxseed
  • 0.25 cup Unsweetened shredded coconut
  • 10 pieces Medjool dates, pitted
  • 0.5 cup Almond butter
  • 2 tablespoons Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Cinnamon
  • 0.25 teaspoon Sea salt

Directions

Step 1

Place the pitted Medjool dates in a small bowl and cover them with warm water for about 5 minutes to soften.

Step 2

Drain the dates and add them to a food processor. Pulse until they form a thick paste.

Step 3

Add almond flour, chopped walnuts, sunflower seeds, ground flaxseed, and shredded coconut into the food processor with the date paste. Pulse until the ingredients are well combined.

Step 4

Add almond butter, melted coconut oil, vanilla extract, cinnamon, and sea salt to the mixture in the food processor.

Step 5

Pulse again until all ingredients are well mixed, forming a dough-like consistency.

Step 6

Line a baking sheet with parchment paper.

Step 7

Scoop about 1 tablespoon of the mixture and roll it between your palms to form a ball. Place the ball onto the parchment-lined baking sheet.

Step 8

Repeat the rolling process until all the mixture has been used.

Place the baking sheet in the refrigerator for at least 30 minutes to allow the energy balls to firm up.
