Ingredients

  • 1.5 cups Almond flour
  • 0.25 cups Coconut flour
  • 0.5 cups Tapioca flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.25 cup Coconut sugar
  • 3 large Eggs
  • 0.5 cup Almond milk
  • 1 teaspoon Vanilla extract
  • 2 cups Coconut oil

Directions

Step 1

In a large mixing bowl, whisk together the almond flour, coconut flour, tapioca flour, baking powder, salt, and coconut sugar until well combined.

Step 2

In another bowl, beat the eggs and then mix in the almond milk and vanilla extract.

Step 3

Gradually pour the wet ingredients into the dry ingredients, stirring continuously to form a smooth, thick batter.

Step 4

Cover the bowl with a kitchen towel and let the batter rest for about 10 minutes to allow the flours to absorb the liquid and thicken slightly.

Step 5

Heat the coconut oil in a deep frying pan over medium heat until it reaches 350°F (175°C).

Using a small ice cream scoop or tablespoon, carefully drop small, rounded balls of batter into the hot oil.
