  • 1 teaspoon Baking soda
  • 0.5 teaspoon Sea salt
  • 4 large Eggs
  • 2 tablespoons Honey
  • 1 tablespoon Apple cider vinegar
  • 0.25 cup Coconut oil, melted
  • 0.5 cup Unsweetened shredded coconut
  • 0.5 cup Mixed nuts (such as almonds, walnuts, and pecans), roughly chopped
  • 0.5 cup Mixed dried fruits (such as raisins, cranberries, and apricots), roughly chopped
  • 2 tablespoons Sunflower seeds
  • 2 tablespoons Pumpkin seeds

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a 9x5 inch loaf pan with parchment paper or lightly grease it with coconut oil.

Step 2

In a large mixing bowl, combine the almond flour, ground flaxseed, coconut flour, baking soda, and sea salt. Mix well to ensure an even distribution of ingredients.

In a separate medium bowl, whisk together the eggs, honey, apple cider vinegar, and melted coconut oil until smooth.
