Ingredients

  • 500 grams molokhia leaves, finely chopped
  • 6 cups chicken broth
  • 500 grams boneless, skinless chicken thighs
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon ground coriander
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 1 bay leaf

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot over medium heat.

Step 2

Add the onion and sauté until translucent, about 5 minutes.

Step 3

Add the minced garlic and sauté for an additional minute until fragrant.

Step 4

Stir in the ground coriander, salt, and black pepper, cooking for another 30 seconds to release the spices' aroma.

Pour in the chicken broth and add the bay leaf. Bring to a boil.

Add the chicken thighs to the pot, reduce the heat to low, and let simmer for 20 minutes, or until the chicken is cooked through.
