  • 4 medium zucchini
  • 500 grams ground pork
  • 4 cloves garlic
  • 60 ml coconut aminos
  • 15 ml fish sauce
  • 15 ml sesame oil
  • 1 teaspoon ground white pepper
  • 2 whole red chili
  • 4 stalks green onions
  • 30 grams fresh cilantro
  • 1 whole lime

Directions

Step 1

Use a spiralizer to turn the zucchini into noodles and set aside.

Step 2

Mince the garlic and finely chop the red chili, green onions, and cilantro. Set aside.

Step 3

In a large skillet, heat sesame oil over medium heat. Add the minced garlic and cook until fragrant, approximately 1 minute.

Add the ground pork to the skillet, breaking it up with a spatula. Cook until browned, around 5-7 minutes.

Step 5

Once the pork is browned, add coconut aminos, fish sauce, and ground white pepper. Stir well to combine and cook for another 2-3 minutes.

Step 6

In a separate pan over medium heat, lightly sauté the zucchini noodles for 2-3 minutes until they begin to soften but still have a slight crunch.

Step 7

To serve, divide the zucchini noodles among four bowls. Top each with the savory pork mixture.

Step 8

Garnish with chopped red chili, green onions, and cilantro. Squeeze fresh lime juice over each serving according to taste.
