Ingredients

  • 6 pieces green plantains
  • 2 tablespoons coconut oil
  • 1 medium, diced yellow onion
  • 3 minced garlic cloves
  • 1 tablespoon, grated ginger
  • 1 medium, chopped red bell pepper
  • 2 large, diced tomatoes
  • 2 cups water
  • 1 teaspoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon coriander powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped fresh cilantro

Directions

Step 1

Peel the green plantains and slice them into 1/2-inch thick rounds.

Step 2

In a large pot, heat the coconut oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.

Step 3

Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.

Add the chopped red bell pepper and diced tomatoes to the pot, stirring well to combine with the onion mixture. Cook for 3-4 minutes until the vegetables start to soften.
