  • 4 medium sweet potatoes
  • 1 cup frozen peas
  • 0.5 cups coconut milk

  • 2 tablespoons fresh parsley

Directions

Step 1

Peel and cube the sweet potatoes into 1-inch pieces for even cooking.

In a large pot, add the sweet potato cubes and cover them with water. Bring to a boil over medium-high heat.

Reduce the heat to medium and let the sweet potatoes simmer for about 15-20 minutes, or until they are fork-tender.
