Ingredients

  • 3 large Eggs
  • 0.5 small, finely chopped Red onion
  • 1 small, finely chopped Tomato
  • 1 small, finely chopped Green chili
  • 2 tablespoons, chopped Cilantro
  • 0.25 teaspoon Turmeric powder
  • 0.5 teaspoon Ground cumin
  • 0.25 teaspoon Salt
  • 1 tablespoon Coconut oil

Directions

Step 1

Crack the eggs into a medium mixing bowl and beat them well until they are slightly frothy. Set aside.

Step 2

Add the finely chopped red onion, tomato, green chili, and cilantro to the beaten eggs. Mix well to combine.

Step 3

Sprinkle the turmeric powder, ground cumin, and salt over the egg mixture and stir well to ensure the spices are evenly distributed.

Step 4

Heat the coconut oil in a non-stick frying pan over medium heat.

Step 5

Once the oil is hot, pour the egg mixture into the pan, spreading it evenly with a spatula. Reduce the heat to low and let it cook for about 4-5 minutes until the edges start to lift and the center is nearly set.

Step 6

Carefully flip the omelette over using a spatula and cook for another 2-3 minutes until fully cooked and golden brown.

Step 7

Transfer the Masala Omelette to a plate, and serve hot, garnished with extra cilantro if desired.
