Ingredients

  • 1 cup almond flour
  • 0.5 cup tapioca flour
  • 1 cup coconut milk
  • 2 large eggs
  • 2 tablespoons honey
  • 3 tablespoons coconut sugar
  • 1 teaspoon baking soda
  • 1 teaspoon apple cider vinegar
  • 0.25 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil
  • 0.5 cup crushed peanuts
  • 0.5 cup dark chocolate (70% or higher, chopped)

Directions

Step 1

In a large mixing bowl, combine almond flour, tapioca flour, coconut sugar, and salt. Whisk well to combine.

Step 2

In another bowl, beat the eggs and then add coconut milk, honey, and vanilla extract. Mix until smooth and all liquid ingredients are well integrated.

Step 3

Pour the wet ingredients into the dry ingredients. Stir gently until you have a smooth batter. There should be no lumps.

Step 4

Add baking soda and apple cider vinegar to the batter and mix well. The batter should be slightly thick but pourable.

Step 5

Heat a non-stick skillet over medium heat. Add 1 tablespoon of coconut oil and allow it to melt and coat the pan evenly.

Step 6

Pour half of the batter into the skillet, spreading it evenly to form a round pancake. Cover the skillet with a lid and cook for about 10 minutes, or until bubbles form on the surface and the edges appear set.

Remove the lid, sprinkle half of the crushed peanuts and dark chocolate evenly over the pancake. Cover again and cook for an additional 3-5 minutes or until the chocolate has melted and the pancake is fully cooked.

Step 8

Carefully remove the Martabak from the skillet. Repeat the process with the remaining batter and fillings.
