Ingredients

  • 2 cups Almond flour
  • 0.25 cup Coconut flour
  • 0.5 cup Coconut oil, melted
  • 0.25 cup Honey
  • 1 teaspoon Vanilla extract
  • 2 cups Fresh ripe mangoes, peeled and diced
  • 2 tablespoons Lemon juice
  • 3 large Eggs
  • 0.25 cup Arrowroot powder
  • 0.25 teaspoon Sea salt

Directions

Step 1

Preheat the oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

Step 2

In a mixing bowl, combine almond flour, coconut flour, melted coconut oil, honey, and vanilla extract. Mix until crumbly.

Step 3

Press the mixture firmly into the bottom of the prepared baking dish to form an even crust. Bake for 10 minutes until slightly golden. Remove from oven and set aside to cool.

Step 4

To make the mango filling, puree the diced mangoes and lemon juice in a blender or food processor until smooth.

Step 5

In a separate bowl, whisk together the eggs, arrowroot powder, and sea salt until well combined.

Step 6

Add the mango puree to the egg mixture and whisk until fully incorporated.

Step 7

Pour the mango filling over the slightly cooled crust, spreading evenly with a spatula.

Step 8

Return the baking dish to the oven and bake for 20 minutes, or until the filling is set and slightly firm to touch.

Step 9

Remove from oven and let it cool completely in the pan on a wire rack, then refrigerate for at least 1 hour to allow bars to firm up.

Step 10

Once chilled, use the parchment overhang to lift the bars out of the pan and slice them into desired shapes and sizes. Serve cold.
