Ingredients

  • 500 grams ground lamb
  • 500 grams ground beef
  • 50 grams pine nuts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground coriander
  • 0.5 teaspoon ground cumin
  • 1 teaspoon salt

Directions

Step 1

In a large mixing bowl, combine the ground lamb and beef until well blended.

Step 2

Toast the pine nuts in a dry skillet over medium heat, stirring frequently, until golden brown, about 3-5 minutes. Remove from heat and let them cool.

Step 3

Add the cooled pine nuts, minced garlic, ground allspice, ground cinnamon, ground black pepper, ground coriander, ground cumin, and salt to the meat mixture.

Step 4

Mix thoroughly with your hands until all the spices are evenly distributed throughout the meat.

Step 5

Form the meat mixture into small sausage links, about 2 inches long and 1 inch in diameter.

Step 6

In a large skillet, heat the olive oil over medium-high heat.

Step 7

Add the sausages in batches to avoid overcrowding and pan-fry until they are browned on all sides and cooked through, about 10-12 minutes. Check for doneness by cutting one open to ensure there is no pink inside.

Step 8

Remove the cooked sausages and let them rest on a paper towel-lined plate to drain any excess oil.

Step 9

Serve warm as part of a mezze platter or alongside a fresh green salad.
