Ingredients

  • 2 pieces Mackerel fillets
  • 1 cup Cauliflower florets
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Coconut aminos
  • 1 teaspoon Avocado oil
  • 0.25 teaspoon Sea salt
  • 1 teaspoon Wasabi paste
  • 1 sheet Nori seaweed sheets
  • 1 small piece Fresh ginger

Directions

Step 1

Start by preparing the cauliflower rice. Wash the cauliflower florets, then pulse in a food processor until they reach a rice-like consistency.

Step 2

In a medium-sized skillet, heat the avocado oil over medium heat. Add the cauliflower rice and cook until tender, about 5 minutes, stirring occasionally.

Step 3

Add the rice vinegar and sea salt to the cauliflower rice. Stir well to combine and remove from heat. Allow it to cool to room temperature.

Step 4

While the cauliflower rice cools, prepare the mackerel. Slice the mackerel fillets into 1-inch wide, thin slices.

Step 5

Cut the nori sheet into small strips, roughly 1 inch by 3 inches, enough to wrap around the nigiri.

Step 6

With wet hands, shape about 1 tablespoon of the cooled cauliflower rice into an oval patty. Repeat to make additional pieces.

Step 7

Place a small dab of wasabi on top of each cauliflower rice oval. Lay a slice of mackerel over the wasabi.

Step 8

Wrap a strip of nori around the mackerel and cauliflower rice, sealing it by moistening the edge of the nori strip.

Step 9

Grate fresh ginger and mix with coconut aminos to serve as a dipping sauce.

Step 10

Arrange the nigiri on a platter and serve with additional wasabi and the ginger-coconut aminos dipping sauce.
