  • 2 tablespoons Olive oil
  • 1 medium Onion

  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Fresh spinach
  • 0.25 cup Fresh basil leaves

Directions

Step 1

Begin by peeling the sweet potatoes and spiraling them into noodles using a spiralizer. Set aside.

In a large skillet, heat the olive oil over medium heat.

Dice the onion and mince the garlic cloves. Add these to the skillet and sauté for about 5 minutes, until the onion is translucent and fragrant.
