Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 6 slices cooked bacon, crumbled
  • 2 tablespoons fresh chives, chopped
  • 1 cup coconut cream
  • 0.5 teaspoon garlic powder
  • 1 diced avocado
  • 1 tablespoon lemon juice
  • 2 tablespoons green onions, sliced
  • 0.5 teaspoon smoked paprika

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Wash and scrub the sweet potatoes well, then dry them off with a towel. Using a fork, poke several holes in each sweet potato to allow steam to escape during baking.

Rub each sweet potato with olive oil, sprinkle with sea salt and black pepper, and place them on the prepared baking sheet.
