Ingredients

  • 2 cups Almond flour
  • 0.25 cups Coconut flour
  • 2 tablespoons Poppy seeds
  • 1 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 3 large Eggs
  • 0.5 cup Honey
  • 2 tablespoons Lemon zest
  • 0.25 cup Lemon juice
  • 0.25 cup Coconut oil, melted
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a muffin tin with baking cups.

Step 2

In a large bowl, whisk together the almond flour, coconut flour, poppy seeds, baking soda, and salt until well combined.

Step 3

In a separate medium bowl, whisk the eggs, honey, lemon zest, lemon juice, melted coconut oil, and vanilla extract until smooth and fully blended.
