  • 1 teaspoon baking soda
  • 0.5 teaspoon sea salt
  • 2 tablespoons poppy seeds
  • 3 large eggs
  • 0.25 cup honey
  • 0.25 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 0.25 cup fresh lemon juice

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a muffin pan with 12 parchment paper liners.

Step 2

In a large mixing bowl, whisk together the almond flour, coconut flour, baking soda, sea salt, and poppy seeds until well combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.

Step 5

Evenly distribute the batter into the prepared muffin liners, filling each about two-thirds full.

Step 6

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Step 8

Enjoy these muffins as a healthy snack or part of your breakfast!
