Ingredients

  • 4 seabass fillets
  • 2 tablespoons extra virgin olive oil
  • 1 lemon
  • 2 tablespoons fresh parsley
  • 1 tablespoon fresh thyme
  • 3 garlic cloves
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 4 lemon wedges

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Rinse the seabass fillets under cold water and pat them dry with paper towels.

Step 3

Place the fillets in a baking dish, skin-side down, and lightly drizzle each with 1 tablespoon of extra virgin olive oil.

Step 4

Zest a lemon and scatter the zest over the fillets. Cut the zested lemon in half and squeeze the juice from one half over the fish. Reserve the other half for serving.

Step 5

Finely chop the fresh parsley and thyme, and mince the garlic cloves.

Step 6

In a small bowl, combine the parsley, thyme, minced garlic, sea salt, and black pepper.

Step 7

Sprinkle the herb and garlic mixture evenly over the fish fillets.

Step 8

Cover the baking dish with aluminum foil and place it in the preheated oven.

Step 9

Bake for 18-20 minutes, or until the fish is opaque and flakes easily with a fork.

Step 10

Remove from the oven and let rest for a minute or two.

Step 11

Serve the baked seabass fillets with the remaining lemon, cut into wedges, on the side for additional squeezing, if desired.
