Ingredients

  • 500 grams lamb shoulder, cubed
  • 2 tablespoons coconut oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon ground cinnamon
  • 400 grams crushed tomatoes
  • 200 grams fresh spinach leaves
  • 200 milliliters coconut milk
  • 1 teaspoon salt
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon fresh lemon juice

Directions

Step 1

Heat the coconut oil in a large pot over medium heat. Add the cumin seeds and let them sizzle for 30 seconds until fragrant.

Step 2

Add the chopped onion to the pot and sauté for about 5 minutes until translucent.

Step 3

Stir in the minced garlic and grated ginger, cooking for another 2 minutes until aromatic.

Mix in the ground coriander, turmeric, and cinnamon. Cook for an additional minute, stirring continuously to prevent sticking.

Add the lamb cubes to the pot and cook until they are browned on all sides, approximately 5 to 7 minutes.
