  • 500 grams Coconut yogurt
  • 2 tablespoons Lemon juice
  • 0.5 teaspoon Sea salt
  • 2 tablespoons Extra virgin olive oil
  • 2 tablespoons Fresh mint leaves, chopped
  • 2 tablespoons Crushed pistachios
  • 0.5 teaspoon Sumac

Directions

Step 1

Line a small colander or fine-mesh sieve with a muslin cloth or a few layers of cheesecloth. Place the lined colander over a larger bowl to catch the liquid.

Step 2

Pour the coconut yogurt into the lined colander. Allow the yogurt to strain in the refrigerator for at least 24 hours, or until it reaches a thick, cream cheese-like consistency. Discard the liquid whey or save it for another use.

Step 3

After 24 hours, transfer the thickened coconut yogurt from the cheesecloth into a mixing bowl.

Step 4

Stir in the lemon juice and sea salt, mixing until smooth and well blended.

Scoop the labneh into a serving dish and create a shallow well in the center using the back of a spoon.
