  • 2 tablespoons Coconut oil
  • 0.25 cup Cocoa powder
  • 3 tablespoons Erythritol or preferred keto sweetener
  • 1 teaspoon Vanilla extract
  • 1 pinch Pinch of sea salt
  • 4 ounces Chopped dark chocolate (70% cacao or higher)
  • 0.5 cup Chopped nuts (e.g., almonds or pecans, optional)

Directions

Step 1

In a medium saucepan, combine the coconut milk, almond butter, coconut oil, cocoa powder, erythritol, vanilla extract, and sea salt.

Step 2

Place the saucepan over medium heat and whisk the mixture continuously until it becomes smooth and the cocoa powder and erythritol are fully dissolved. This should take about 5 minutes. Do not let the mixture come to a boil.

Remove the saucepan from the heat and let it cool slightly.

Pour the mixture into ice cream bar molds, filling them about three-quarters full to leave room for expansion as they freeze.
