Ingredients

  • 1 cup raw almonds
  • 1 cup raw pecans
  • 1 cup raw walnuts
  • 0.5 cup raw sunflower seeds
  • 0.5 cup raw pumpkin seeds
  • 1 cup unsweetened shredded coconut
  • 2 tablespoons chia seeds
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 0.25 cup coconut oil
  • 0.25 cup monk fruit sweetener

Directions

Step 1

Preheat your oven to 300°F (150°C) and line a large baking sheet with parchment paper.

Step 2

In a food processor, pulse the almonds, pecans, and walnuts until they are broken into small chunks. Do not over-process, as you want some texture.

Step 3

In a large mixing bowl, combine the chopped nuts with sunflower seeds, pumpkin seeds, shredded coconut, chia seeds, ground cinnamon, and sea salt. Mix well.

Step 4

In a small saucepan, heat the coconut oil and monk fruit sweetener over low heat until melted and well combined. Add the vanilla extract and stir.

Step 5

Pour the liquid mixture over the dry ingredients and mix well until all ingredients are evenly coated.
