Ingredients

  • 2 large sweet potatoes
  • 6 slices bacon
  • 1 medium red onion
  • 0.25 cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 0.25 cup extra virgin olive oil
  • 2 teaspoons honey
  • 2 tablespoons fresh parsley
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon salt

Directions

Step 1

Peel and dice the sweet potatoes into 1-inch cubes.

Step 2

Bring a large pot of salted water to a boil. Add the diced sweet potatoes and cook until fork-tender, about 10-12 minutes. Drain the sweet potatoes and set aside to cool slightly.

While the sweet potatoes are cooking, chop the bacon into small pieces. In a large skillet over medium heat, cook the bacon until it is crispy, about 5-7 minutes. Use a slotted spoon to remove the bacon and drain on paper towels.
