Preheat your oven to 350°F (175°C) and lightly grease a doughnut pan with coconut oil.
In a large mixing bowl, combine almond flour, coconut flour, tapioca starch, baking soda, and salt. Mix well.
In another bowl, whisk together the eggs, coconut milk, honey, vanilla extract, and melted coconut oil until smooth.
Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms.
Fill each cavity of the doughnut pan about 3/4 full with the batter.
Bake for 15-18 minutes, or until the doughnuts are golden brown and a toothpick inserted into the center comes out clean.
Allow the doughnuts to cool in the pan for 5 minutes, then carefully transfer them to a wire rack to cool completely.
While the doughnuts are cooling, prepare the jam filling. Place the strawberries in a small saucepan over medium heat. Cook, stirring occasionally, until the strawberries break down and release their juices.
Mash the softened strawberries with a fork or potato masher to your desired consistency. Stir in the chia seeds and cook for another 2-3 minutes until the mixture thickens. Remove from heat and let it cool.
