Ingredients

  • 2 pounds Beef chuck
  • 3 tablespoons Coconut oil
  • 2 large Onions, diced
  • 4 Garlic cloves, minced
  • 3 medium Carrots, sliced
  • 1 large Red bell pepper, diced
  • 3 tablespoons Tomato paste
  • 4 cups Beef broth
  • 3 tablespoons Paprika
  • 1 teaspoon Ground caraway seeds
  • 2 Bay leaves
  • 2 teaspoons Sea salt
  • 1 teaspoon Black pepper, ground
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

1. Cut the beef chuck into 1-inch cubes, trimming excess fat.

2. Heat 2 tablespoons of coconut oil in a large pot over medium-high heat. Sear the beef in batches until browned on all sides. Remove and set aside.

3. Reduce the heat to medium and add the remaining tablespoon of coconut oil. Add diced onions and sauté for about 5 minutes or until translucent.
