Preheat your oven to 325°F (163°C).
Remove the turkey from the refrigerator and let it sit at room temperature for about 30 minutes. This helps the bird cook more evenly.
Pat the turkey dry with paper towels. Season the inside of the cavity generously with 1 tablespoon of sea salt and 1/2 teaspoon of black pepper.
Melt the coconut oil in a small saucepan over low heat. Peel and mince the garlic cloves, then add them to the melted oil. Let it cook for 1-2 minutes until fragrant.
Remove the saucepan from the heat and add the honey, stirring until well combined.
Finely chop the rosemary, thyme, and sage and add them to the coconut oil and honey mixture along with the zest and juice of one lemon. Stir well.
Carefully lift the skin of the turkey breast and rub half of the herb and honey mixture directly onto the meat under the skin.
Rub the remaining mixture over the entire exterior of the turkey.
Tie the turkey legs together with kitchen twine. Tuck the wing tips under the body to prevent them from burning.
Place the turkey on a roasting rack inside a large roasting pan, breast-side up.
Pour 2 cups of water into the bottom of the roasting pan to prevent drippings from burning.
Roast the turkey in the preheated oven for approximately 3 hours, or until the internal temperature reaches 165°F (74°C) when checked with a meat thermometer inserted into the thickest part of the thigh.
Baste the turkey with its juices every 45 minutes, adding more water to the pan if necessary.
Once cooked, remove the turkey from the oven and let it rest for at least 20 minutes before carving. This allows the juices to redistribute, ensuring a moist turkey.
