Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup almond flour
  • 0.5 cup tapioca starch
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 large eggs
  • 0.25 cup coconut oil
  • 0.5 cup raw honey
  • 0.25 cup tomato paste
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons coconut aminos
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 0.5 teaspoon ground mustard
  • 0.25 teaspoon cayenne pepper

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2

Cut the chicken breasts into bite-sized chunks, about 1-inch pieces.

Step 3

In a shallow bowl, combine almond flour, tapioca starch, paprika, garlic powder, onion powder, salt, and black pepper. Stir well to combine.

Step 4

In another shallow bowl, beat the eggs until smooth.

Step 5

Dip each piece of chicken into the beaten eggs, allowing excess to drip off, then coat in the almond flour mixture, pressing lightly to adhere.

Step 6

Heat the coconut oil in a large skillet over medium heat. Working in batches, fry the coated chicken pieces for about 2-3 minutes per side until golden brown. Transfer fried chicken to the prepared baking sheet.

Step 7

Bake the pre-fried chicken pieces in the oven for about 10-12 minutes until fully cooked through.

Step 8

While the chicken is baking, prepare the honey BBQ sauce. In a small saucepan, combine raw honey, tomato paste, apple cider vinegar, coconut aminos, smoked paprika, chili powder, ground mustard, and cayenne pepper.

Step 9

Stir the sauce ingredients over medium heat until they come to a simmer, then reduce the heat to low and let it cook for an additional 5 minutes, stirring occasionally.

Step 10

Once the chicken is done baking, remove from the oven and transfer to a large mixing bowl.

Step 11

Pour the prepared honey BBQ sauce over the chicken and gently toss to coat each piece evenly.

Step 12

Serve the Paleo Honey BBQ Boneless Wings hot, optionally garnished with chopped parsley or green onions.
