Ingredients

  • 2 cups almond flour
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons sea salt
  • 0.25 cups coconut oil, melted
  • 0.5 cups maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup creamy almond butter
  • 0.25 cup honey
  • 2 tablespoons coconut flour

Directions

Step 1

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together the almond flour, baking soda, and sea salt.

Step 3

In another larger bowl, mix the melted coconut oil, maple syrup, and vanilla extract until well combined.

Step 4

Gradually add the dry ingredients into the wet ingredients, stirring until a dough forms.

Step 5

Scoop 1 tablespoon of dough and roll it into a ball; place each ball onto the prepared baking sheet about 2 inches apart.

Step 6

Use a fork to gently flatten the balls into discs, creating a crisscross pattern on top of each cookie.

Step 7

Bake in the preheated oven for about 10-12 minutes, until the edges start to turn golden. Remove from the oven and let them cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Step 8

While the cookies cool, prepare the almond butter filling. In a small bowl, mix the creamy almond butter, honey, and coconut flour until smooth and thick.

Step 9

Once the cookies have cooled completely, spread a generous amount of filling onto the flat side of one cookie, then sandwich it with another cookie, flat side down, pressing gently.

Step 10

Repeat the process until all cookies are used up, serving each as a delightful nutter butter sandwich.
