Ingredients

  • 1 medium head cauliflower florets
  • 1 cup, peeled and diced butternut squash

  • 1 cup unsweetened almond milk
  • 0.25 cup nutritional yeast
  • 1 tablespoon tapioca starch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon ground turmeric
  • 1 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh chives
  • 1 cup water

Directions

Step 1

Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.

Step 2

Cut the cauliflower head into florets and spread them on the baking sheet. Drizzle 1 tablespoon of olive oil over the florets and roast for 15 minutes, or until they are lightly browned and tender.

Step 3

In a medium saucepan, combine the diced butternut squash, chopped carrot, and water. Bring to a boil over medium-high heat, then reduce the heat and simmer for about 15 minutes, or until the vegetables are tender.
