Roll the lemons on a hard surface with the palm of your hand to make them easier to juice.
Cut the lemons in half and juice them using a citrus juicer, straining the seeds while preserving some pulp if desired.
Measure and pour the fresh lemon juice into a large pitcher.
In a small saucepan, warm 1 cup of the water over low heat and add the raw honey.
Stir the honey water until the honey is fully dissolved to create a honey syrup. Remove from heat.
Add the honey syrup to the pitcher with the lemon juice.
Pour the remaining 3 cups of cold water into the pitcher and stir well to combine.
Add the ice cubes to chill the lemonade.
Taste and adjust the sweetness or tartness by adding more water or honey if necessary.
If desired, slightly bruise the mint leaves by gently rubbing them between your fingers and add them to the lemonade for an aromatic twist.
Refrigerate the lemonade for about 30 minutes if you prefer it cooler, or serve immediately over more ice.
