Ingredients

  • 500 grams ground pork
  • 3 tablespoons coconut sugar
  • 2 tablespoons coconut aminos
  • 1 tablespoon apple cider vinegar
  • 6 cloves garlic, minced
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 0.5 teaspoon baking soda
  • 2 tablespoons cold water
  • 5 meters pork casing (optional)

Directions

Step 1

1. In a large bowl, combine ground pork, coconut sugar, coconut aminos, and apple cider vinegar. Mix until well incorporated.

Step 2

2. Add minced garlic, sea salt, black pepper, paprika, and baking soda to the meat mixture. Mix thoroughly until the seasonings are evenly distributed.

Step 3

3. Gradually add cold water to the mixture. Use your hands to blend the mixture well until there is an even consistency and the mixture sticks together.

Step 4

4. If using casings, soak them in water according to package instructions, rinse thoroughly, then tie one end of each casing.

Step 5

5. Stuff the meat mixture into the casings, being careful not to overfill to avoid breaking. Twist the sausage into desired links, tying them off with kitchen twine.

Step 6

6. If not using casings, shape the mixture into sausage patties or long logs for a casing-less sausage.

Step 7

7. Heat a non-stick pan over medium heat. Cook the sausages for about 10 minutes, turning occasionally, until browned on all sides and cooked through.

Step 8

8. Serve hot with your choice of accompaniments, such as garlic fried cauliflower rice or a fresh salad.
