Ingredients

  • 2 cups Almond flour
  • 0.25 cup Coconut flour
  • 0.25 cup Tapioca starch
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 0.25 cup Coconut oil
  • 0.25 cup Honey
  • 1 teaspoon Apple cider vinegar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Cinnamon
  • 0.25 cup Coconut sugar
  • 0.25 cup Walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.

Step 2

In a large bowl, combine the almond flour, coconut flour, tapioca starch, baking soda, and salt.

Step 3

In a separate bowl, whisk together the melted coconut oil, honey, apple cider vinegar, eggs, and vanilla extract.

Step 4

Pour the wet ingredients into the dry ingredients and mix until a dough forms.

Step 5

On a piece of parchment paper, roll out the dough into a rectangular shape about 1/4-inch thick. Use a little almond flour to prevent sticking if necessary.

Step 6

In a small bowl, combine the cinnamon and coconut sugar for the filling.

Step 7

Sprinkle the cinnamon and coconut sugar evenly over the rolled-out dough. If using, sprinkle the chopped walnuts over the cinnamon sugar mixture.

Step 8

Carefully roll the dough from one long side to the other into a log shape. Use the parchment paper to help guide the dough as you roll.

Step 9

Using a sharp knife, cut the log into 8 equal slices and place them cut side up in the prepared baking dish.

Step 10

Bake in the preheated oven for 25-30 minutes or until the buns are golden brown and firm to the touch.

Step 11

Allow the buns to cool for a few minutes before serving. Enjoy your paleo cinnamon buns warm or at room temperature.
