Ingredients

  • 1 cup almond flour
  • 1 cup coconut flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup vanilla protein powder (paleo-friendly)
  • 1 cup almond butter
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup sliced almonds
  • 1/4 cup dark chocolate chips (70% cacao or higher, paleo-friendly)

Directions

Step 1

Line an 8x8 inch baking dish with parchment paper, leaving some overhang to lift the bars out later.

Step 2

In a large mixing bowl, combine almond flour, coconut flour, cocoa powder, and protein powder, and mix thoroughly.

Step 3

In a separate microwave-safe bowl, combine almond butter and coconut oil. Microwave for 30 seconds to 1 minute until melted, then stir well to combine.

Step 4

Add the melted almond butter mixture, maple syrup, and vanilla extract to the dry ingredients. Mix until fully incorporated. The mixture should be thick and slightly sticky.

Step 5

Fold in the sliced almonds until evenly distributed throughout the mixture.

Step 6

Transfer the mixture to the prepared baking dish. Use a spatula or your hands to press the mixture firmly into an even layer in the dish.

Step 7

Sprinkle the dark chocolate chips evenly over the top and gently press them into the surface of the bars.
