  • 28 ounces crushed tomatoes
  • 3 tablespoons tomato paste
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 medium (diced) zucchini
  • 0.5 teaspoon cayenne pepper
  • 1 bay leaf
  • 0.25 cup (chopped) cilantro

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the diced onion and sauté for about 5 minutes until translucent.

Stir in the minced garlic and cook for another minute until fragrant.
