  • 2 pieces boneless, skinless chicken breast
  • 2 tablespoons coconut oil

  • 2 medium, diced carrots
  • 2 diced celery stalks
  • 1 cup chicken broth
  • 2.5 cups almond flour
  • 0.5 cup arrowroot flour
  • 1 teaspoon baking powder
  • 2 large, beaten egg
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon fresh thyme

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, melt 1 tablespoon of coconut oil.

Step 3

Season chicken breast with salt and black pepper.

Step 4

Add chicken to the skillet and cook until browned and cooked through, about 6-8 minutes per side.

Remove chicken from the skillet and let cool slightly, then shred with two forks.
