Ingredients

  • 500 grams Chicken breast
  • 1 cup Coconut flour
  • 1 cup Almond flour
  • 3 large Eggs
  • 0.5 cup Coconut milk
  • 1 teaspoon Baking soda
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh parsley

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 2

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook until fully cooked, approximately 7 minutes per side. Once cooked, allow to cool slightly before shredding finely.

Step 3

In a large mixing bowl, combine coconut flour, almond flour, garlic powder, onion powder, baking soda, salt, and black pepper.

Step 4

In a separate bowl, whisk together the eggs, coconut milk, and apple cider vinegar until smooth.

Step 5

Pour the wet ingredients into the dry ingredients and stir until well combined. The batter should be thick.

Step 6

Fold the shredded chicken and chopped parsley into the batter until evenly distributed.

Step 7

Scoop approximately 1/4 cup of the batter and form it into a bun shape, placing each on the prepared baking tray. Repeat until all batter is used.

Step 8

Brush the tops of the buns with the remaining olive oil.

Bake in the preheated oven for 20-25 minutes until the buns are golden brown and a toothpick inserted into the center comes out clean.
