Wash and core the apples, then chop them into small pieces. There is no need to peel them as the peels will add natural pectin to help thicken the syrup slightly.
In a medium saucepan, combine the chopped apples, lemon juice, cinnamon stick, maple syrup, and water.
Place the saucepan on the stove over medium heat. Bring the mixture to a simmer.
Reduce the heat to low and continue to simmer for about 20-25 minutes, stirring occasionally, until the apples have softened considerably and the liquid has reduced by about half.
Remove from heat and carefully remove the cinnamon stick.
Transfer the contents of the saucepan to a blender or food processor. Blend until completely smooth. Alternatively, you can use an immersion blender directly in the pot.
Return the blended apple mixture to the saucepan. Stir in the vanilla extract and salt.
